A very robust version of yeast-influenced Cava, Extremarium’s nose of toast, brioche, pastry shells, and rising bread dough is as dramatically yeasty as any Cava you will find. The mouth is round with yellow apples, oranges, pears, and some other citrus notes. The middle sees more apple than pear and citrus while the finish goes the other way with long, pear notes and marzipan pastries. Drink now or over the next several years.
The wine is bright pale yellow with fine and continuous bubbles and a perfect mousse. It expresses clean and fresh peach and grapefruit aromas, along with toasted coffee, coconut, vanilla mineral tones, and white flower notes. On the palate, it is fresh, fruity, creamy, and light with good body from its contact with the yeasts and hints of raw almonds and hazelnuts. This is a Cava that can accompany aperitifs, as well as a wide variety of dishes such as fish and seafood, light meat dishes, pastas and rice, salads, smoked fish and meats, and charcuterie. The recommended serving temperature is 6ºC. It should be consumed within 20 months of purchase.
About the Winery
Mont Marçal is a winery located in Castellví de la Marca, about 35 miles southwest of Barcelona in the heart of Penedès wine region. It was founded in 1975 by Manuel Sancho when he decided to retire from music industry and to dedicate his passion to the production of Cava and still wine; today Mont Marçal is fully owned and managed by the Sancho family.
